Global food demand is increasing day by day as the world's population grows. Food is the basic need that everyone requires. With the rise in demand for food products, it appears that quality is being overlooked. Global food demand is likely to increase by 40 percent by 2030. Despite the fact that top corporations are working hard to meet increased demand through the application of contemporary technologies, maintaining a balance between food quality and pricing is tough. We can witness that the consumption of food has consistently increased at a global level. The food and beverage industry is growing globally at a rate of 3.7% per year.
The market for food safety testing is reached around USD 20 billion in 2021, with a CAGR of 7.9% and it might reach USD 30 billion by 2026. The food sector is dynamic and complex. It is expected to grow as the world's population continues to grow, resulting in increased demand for convenience and processed foods. Farmers, food producers, and suppliers have been forced to raise the quantity and increase the quality of agricultural produce and food items in response to rising food demand. According to the Food and Agriculture Organization of the United Nations, worldwide food production must increase by 70% by 2050 to meet rising food demand (FAO).
Food safety practices in the food sector have emerged as a result of rising consumer demand for fresh and acceptable food products. However, the high frequency of foodborne disease outbreaks in a number of countries, including wealthy ones like the United States, As a result, there is currently a higher demand for food microbiological testing. The goal of microbiological testing is to discover and limit the growth of dangerous bacteria that can cause food spoiling and hence assure foodborne disease safety.

Session on: Food Safety
Food Safety is a general term referred to reduce the risk of individuals becoming sick from foodborne illness through managed handling, preparation and storage of food. Each and every food establishment uses processes and sells food in different ways. The main aim of food safety is to prevent the food from contamination. It is essential for every individual to apply proper food safety principles.

Session on: Foodborne Diseases
Food borne illness or diseases are caused by the consumption of contaminated, adulterated, toxic or unhygienically produced food products. Food-borne diseases can be lethal. Almost 1 in 10 people fall ill per year (approximately 600 million) and 420,000 lives lost per year due to food-borne diseases out of which 30% are children below 5 years of age. In European regions, more than 23 million people fall ill from unsafe food per year out of which 3 million are less than 5 years of age and leads to a mortality rate of 5000.

Session on: Food Toxicology
Food toxicology is a branch of science which includes the nature, causes, effects and detection of toxic substances in the food Some of the major effects includes food allergy, food intolerance, food-borne diseases and infections. It can be caused by foreign food-borne pathogens, toxic chemicals or pesticides present in our food, chemical reactions due to the presence of some particular ingredient or improper handling during the production process. It is difficult to differentiate between food allergy and intolerance. Therefore, it is essential to practice good manufacturing practices (GMP) and cautious handling, labelling and preserving of each and every ingredient while preparing and producing of the food products. Consumers should be well aware of all the ingredients, their proportions, and the nutritious value of the product before consumption of the same. Food allergy is the major cause for the elevation in food safety throughout the world.

Session on: Genetically Modified Food
Genetically modified foods or Bio-engineered foods are food products induced with the genetic material of specific micro-organisms to obtain the desired characteristics in the food products. This process is done through various techniques of Genetic engineering and vector biology. There are various economical, ethical, political, social, environmental and health issues related to the use of Genetically modified food products in industrial scale. It is a controversial concern. Though it has the potential to bring massive change and enhancement in the food industry, but it has major safety issues related which cannot be neglected. Genetically modified crops are pest resistant, delayed in ripening, environmental stress tolerance, improved nutrition and taste.

Food Microbiology is the study of micro-organisms present in our food. Some of the microbes helps in the production of food products while others tend to contaminate them, thus causing food spoilage. The study of Food Microbiology is important because it affects the techniques used for food safety, food production and storage. Strains of Bacteria and yeast are used for food production techniques of products such as cheese, yogurt, wine, soy sauce and many more. Similarly, numerous strains of microbes can contaminate the food products if not preserved or stored in a sterile condition.

Session on: Water and Seafood Conservation
Oil spill is the accidental or intentional spillage of liquid petroleum into water bodies, thus affecting the aquatic ecosystem. Fisheries and aquaculture being one of the major sectors of food industries are largely affected by the pollution caused by oil spills. Polycyclic aromatic hydrocarbons released due to these oil spills pollutes the seafood consumed by us. The impact of an oil spill on the seafood industry depends on the intensity and the characteristics of the oil. It can further cause toxic algal blooms which can be poisonous for the fishes and also for the humans consuming them.

Paediatric nutrition is defined as the upkeep of a well-balance diet consisting of the essential nutrients and also the adequate caloric consumption that is needed to trigger evolution and withstand the physiological requirements at the various phases of a child’s growth. It conjointly includes nutritional necessities in infants and children. Because of deficiency of nutrition notably throughout the crucial ages of growth causes improper development of major illness, like anaemia, due to the deficiency of iron or scurvy due to lack of Vitamin C. Nutrition plays a crucial role in a childhood development process. Proper nutrition and food safety help in the appropriate growth and development of children allowing them to achieve their complete potential.
