Food borne illness or diseases are caused by the consumption of contaminated, adulterated, toxic or unhygienically produced food products. Food-borne diseases can be lethal. Almost 1 in 10 people fall ill per year (approximately 600 million)and 420,000 lives lost per year due to food-borne diseases out of which 30% are children below 5 years of age. In European regions, more than 23 million people fall ill from unsafe food per year out of which 3 million are less than 5 years of age and leads to a mortality rate of 5000.

Session on: Food Toxicology

Food toxicology is a branch of science which deals with the nature, causes, effects and detection of toxic substances in the food. Some of the major effects includes food allergy, food intolerance, food-borne diseases and infections. It can be caused by foreign food-borne pathogens, toxic chemicals or pesticides present in our food, chemical reactions due to the presence of some particular ingredient or improper handling during the production process. It is difficult to differentiate between food allergy and intolerance. Therefore, it is essential to maintain good manufacturing practices (GMP) and cautious handling, labeling and preserving of each and every ingredient while preparing and producing of the food products. Consumers should be well aware of all the ingredients, their proportions, and the nutritious value of the product before consumption of the same. Food allergy is the major cause for the elevation in food safety throughout the world.

Session on: Genetically Modified Food

Genetically modified foods or Bio-engineered foods are food products induced with the genetic material of specific micro-organisms to obtain the desired characteristics in the food products. This process is done through various techniques of Genetic engineering and vector biology. There are various economical, ethical, political, social, environmental and health issues related to the use of Genetically modified food products in industrial scale. It is a controversial concern. Though it has the potential to bring massive change and enhancement in the food industry but it has major safety issues related which cannot be neglected. Genetically modified crops are pest resistant, delayed in ripening, environmental stress tolerance, improved nutrition and taste.

Session on:  Food Microbiology

Food Microbiology is the study of micro-organisms present in our food. Some of the microbes helps in the production of food products while others tend to contaminate them, thus causing food spoilage.

The study of Food Microbiology is important because it affects the techniques used for food safety, food production and storage.Strains of Bacteria and yeast are used for food production techniques of products such as cheese, yogurt, wine, soy sauce and many more. Similarly, numerous strains of microbes can contaminate the food products if not preserved or stored in a sterile condition.

Session on:  Seafood Conservation

Oil spill is the accidental or intentional spillage of liquid petroleum into water bodies, thus affecting the aquatic ecosystem. Fisheries and aquaculture being one of the major sectors of food industries are largely affected by the pollution caused by oil spills. Polycyclic aromatic hydrocarbons released due to these oil spills pollutes the seafood consumed by us. The impact of an oil spill on the seafood industry depends on the intensity and the characteristics of the oil. It can further cause toxic algal blooms which can be poisonous for the fishes and also for the humans consuming them.

Milk and other dairy products are more susceptible to contamination. It is important for the dairy industries to implement required control measures to avoid such contamination during the production processes of the dairy products. Maintenance of the milking area, equipment, and personnel is very important. The services should be done in utmost clean environment. The storage and processing areas should be sterilized before and after use. The guidelines provided by the legislation should be strictly maintained and recorded.

Session on: Radiological Surveillance of Food Products

Radioactivity can be present naturally or artificially in food products in varying amounts. Some of the common sources of natural radioactivity is the isotope of potassium or it can be transffered naturally from minerals and rocks. Artificial radioactivity gets imbibed in our food products due to the human usage of nuclear and radioactive weapons or experiments. The presence of radioactive components in our food, even in a minute quantity can be very dangerous for us and also for our future generations. Routine monitoring of all food products should be done by the government to ensure the absence of radioactivity. Cattle grazing on land where radioactive practices have taken place or fishes residing in water bodies affected by radioactive elements can cause such fatal situations.

Food supply chains have the responsibility to deliver different types of food products at various destinations. This process includes the maintenance of temperature and handling requirements, keeping a tally of the numerous containers and guarding the sterility of the products. Food products are susceptible to contamination during the transportation process. Actions which cultivate contamination or spoilage of food products during its transportation are:

-Inadequate refrigeration facility

-Improper cleaning of the transport

-Insufficient protection during the transportation

Session on: Nutrition and Food safety

Nutrition is the process of obtaining necessary nutrients and nourishment for the maintenance of our health and growth of our body. Lack of proper nutrition may cause various diseases and health problems. The lack of proper nutrition leads to malnutrition. Various parts of the world suffer from this condition due to the lack of healthy and safe food. Approximately one billion people are suffering from hunger. Food and Nutrition security is all about ensuring that everyone gets adequate, affordable and nutritious food. Everyone has the right to get a wholesome and healthy food.

Session on:  Global Food Security

Global Food Security is an universal concern. Food being one of the basic needs of humans is essential in every region of the world. Food security is required right from the origin of the food to its packaging. Session on: Food safety Risk Analysis

Researches on various risk assessment methods and components are going on though out the world. Development of such estimation procedures is essential to maintain a food standard and safety in food and beverage industry. Scientists are working throughout the world to develop techniques and methods which could improve the safety and standards of the food we are consuming. There are various tests which could detect and quantify the food additives, food adulterants and contaminants which detoriates the food quality. Various unwanted compounds such as polycyclic aromatic hydrocarbons in seafood, trans-fats in oils and listera in ice creams can be diagnosed.

Market Analysis of the Global Food Consumption:

With the increasing population, the global food demand is also increasing day by day. Food is a basic amenity required by each and everyone. With the elevation in the demand of food products, the maintenance in its quality seems to be ignored. By the year 2030, the global food demand is expected to rise by 35%. We can witness that the consumption of food has consistently increased in a global level. The food and beverage industry is growing globally at a rate of 3.5% per year.

In spite of the commendable growth in the Food production industry, there are various hurdles being faced by them. Some of the major problems being:

People should be acquainted with the quality of the food they are consuming. Some of he facts which must be displayed with the products are the values of the nutrients present and the energy consumed by ingestion of the product.
